My older sister, Tammy, who is Martha Stewart’s clone (by skills, NOT by looks) Gave me this recipe that I have a goal to make this week:
Country Pasta with Mozzarella
8 oz. Uncooked rigatoni
8 slices bacon, cut into 1" pieces
2 c. broccoli flowerets
1 tsp. Fresh garlic
2 c. shredded mozzarella cheese
¼ c. grated Parmesan cheese
pinch of cayenne pepper
¼ c, chopped fresh parsley
Cook rigatoni according to package directions; drain. Meanwhile, in skillet cook bacon over med.-high heat, stirring occasionally, until bacon is browned (6 to 8 min.). Reduce heat to med. Add broccoli and garlic. Cook, stirring occasionally, until broccoli is crisply tender (4 to 5 min.). Add rigatoni and remaining ingredients except parsley. Continue cooking, stirring occasionally, until cheese is melted. Sprinkle with parsley.
