The NAKANO Seasoned Rice Vinegar’s Sweet Varieties are guilt-free alternatives ideal for the holiday season. Just twist, tip and splash on to enhance flavor.
Below you’ll find a recipe for Light and Tangy Mini Baked Apple Pies, which uses the new NAKANO Citrus Seasoned Rice Vinegar. These are delicious mini pies topped with a crunchy granola-oatmeal crust. Plus they are in portion-controlled mason jars for easy serving.
Light and Tangy Mini Baked Apple Pies

SERVINGS: 6

INGREDIENTS

2 Tbsp. butter
1/4 cup + 2 Tbsp. brown sugar, packed
3 cups (1-2 large apples) honey crisp or granny smith, 1/4” dice
1/4 cup NAKANO Citrus Seasoned Rice Vinegar
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 tsp. cornstarch
1/4 cup water
1 cup granola, no fruit
6 mini Mason jars, 4 oz., cleaned
DIRECTIONS

Preheat oven to 350ºF.
In saucepot, add butter and brown sugar and heat until it bubbles, 4-5 minutes. Add diced apples, NAKANO Citrus Seasoned Rice Vinegar, cinnamon and nutmeg. In a small bowl, whisk together the cornstarch and water and add to the apple mixture.
Cook apple mixture until thickened, 1-2 minutes. Remove from heat and spoon into jars. Fill jars up to the bottom lip, reserving room for the granola. Add 2-3 tablespoons of granola to the top of the jars.
Place jars on sheet tray and bake for 4-6 minutes, until granola is golden brown. Serve warm or room temperature.
NOTES:
Seal with lids after it cools to pack in anyone’s lunch!
For a little extra healthy indulgence, serve with vanilla Greek yogurt sweetened with a bit of agave honey.
My thoughts: I am a huge fan of NAKANO Seasoned Rice Vinegar. I plan to make some of these delicious-sounding apple pies with my daughters this holiday season!

About This Blog

Juliann, founder of Beautiful Moms

Welcome to Beautiful Moms!

Hi! I'm Juliann, wife of 33 years to Jon, a mom to four amazing children, and a proud grandma to five precious little ones. I live in Oregon.

When I started Beautiful Moms in 2008, my goal was to connect with other moms who were also raising young children. It became a creative outlet for me to share my thoughts on motherhood, review products I loved, and work with brands that help make family life a little easier.

More importantly, I wanted moms to feel seen. It's so easy to lose ourselves in the demands of caring for everyone else and forget that our own well-being matters, too. Every mom deserves to feel beautiful, valued, and appreciated, no matter what stage of motherhood she's in.

Over the years, Beautiful Moms has evolved right along with me. My children are now all grown up, and I'm blessed to be a grandma.

Life changes so quickly

One thing that hasn't changed is my passion for encouraging other moms—it's simply expanded to include every season of motherhood—from pregnancy and baby's first years to raising teens, becoming an empty nester, navigating healthy aging, and everything in between.

Myelie, contributor at Beautiful Moms

I'm excited to have my daughter, Myelie, join the Beautiful Moms team as a new contributor. As the mom of a newborn and a busy toddler, she brings a fresh perspective on modern motherhood.

She lives in Alabama with her military husband, so she also understands the unique challenges of military life, frequent moves, and building a happy home wherever life takes you.
