It’s nearly indisputable that Sunday brunch is the best meal of the week, and what is brunch without eggs? Maybe you don’t think about your eggs a lot, but Nellie’s Free Range Egg company does!

I was raising my own backyard chicken for about 7 years. My chickens were always free-range and cage free, and they always provided my family with plenty of eggs. I had to give away my sweet chickens last September (to another cage-free farm) after our neighbors called the police on us for the fact that our chickens wandered onto their property and were in their mulch pile. Can you believe it? I can’t either! I refuse to have chickens if they have to be in a cage. They don’t deserve to be locked up.

For Sunday brunch, I always try to create a main dish that includes both eggs and cheese. My favorite is a ham & egg casserole that my grandmother always made, and my family loves it. I decided to create it using Nellie’s Free Range Eggs and Cabot Cheese. The recipe is below.
Ham and Egg Sunday Brunch Casserole

Ingredients:
12 Nellie’s Free Range Eggs
1 carton (15 oz) cottage cheese
1/2 cup all-purpose flour
1 tsp. baking powder
12 ounces Cabot Farmhouse Reserve Cheddar, shredded (about 3 cups)
½ cup Cabot Shredded Mozzarella Whole-Milk
2 cups chopped cooked ham (8 oz.)
1/4 cup minced green onions
Directions:
- HEAT oven to 350°F. BEAT eggs in large bowl until blended. ADD ricotta cheese, flour and baking powder; mix well. STIR IN Cabot shredded cheese, ham and green onions. POUR in greased 13 x 9-inch glass baking dish.
- BAKE in 350°F oven until puffed, golden and knife inserted near center comes out clean, 40 to 50 minutes. LET STAND 5 minutes.
